Both, depending on the line. Our forged knives, like the 8-inch Professional S chef's knife, are made from a single piece of solid steel for extra heft and balance. Our Twin Signature line uses single-piece, precision-stamped blades, which keeps the knife lighter without giving up strength. Either way the blade runs a full tang into the handle.
Yes, there's real handwork in every blade. Our knives are shaped by artisans who hand-sharpen and hand-polish the edge, with a laser-controlled edge check to confirm the cutting angle is right. Edges are set at 15 degrees per side on most knives and 10 degrees on santoku blades.
Our knives consistently rate between 4.5 and 4.8 stars across thousands of reviews, and the themes are the same: razor-sharp out of the box, excellent edge retention, comfortable balanced handles. Blades are ice-hardened to 57 Rockwell for edge retention, and we back them with a lifetime warranty against manufacturing defects. Customers regularly tell us their sets still look and cut like new after 20 years of hand washing.
If you cook often, yes. The value comes from longevity: ice-hardened blades that hold an edge far longer than budget knives, full-tang construction, and a lifetime warranty against manufacturing defects. Reviewers who moved over from cheaper sets tell us they no longer need to sharpen every few weeks, and many are still using knives they bought decades ago. Start with a 3-piece set if you want the essentials, or a block set if you want a full kitchen at once.
Our knives are Japanese-inspired, samurai-sword sharp blades made in our own company-owned factory, which lets us control quality at every step of production. Our forged carbon steel fry pans are crafted in Italy at the Ballarini factory, and a few kitchen appliances such as the Enfinigy electric kettle are made in China.

Our knives are dishwasher safe, but we recommend hand washing. Dishwasher cycles are hard on handles over time, and hand washing plus drying keeps the edge and the bonding between handle and tang in the best shape. Wash with hot soapy water, dry right away, and store in a block or on a magnetic strip rather than loose in a drawer. Be careful during washing, the blades are sharper than most people expect.
Hone regularly with a sharpening steel, which is included in our 7-, 11- and 19-piece block sets. Honing realigns the edge and brings it back to near-new sharpness in a few passes. Our 15-piece self-sharpening block goes a step further, touching up each blade a little every time you remove and replace it. For a full re-edge after a few years of heavy use, a professional sharpening service or a quality sharpener works well on our high-carbon steel.
Yes to induction across the range. Our tri-ply stainless and ceramic nonstick pans work on gas, electric, halogen and induction, and are oven safe to 400°F with the glass lids. Our forged carbon steel fry pans handle all stovetops including induction, plus the grill or an open campfire, and are oven safe up to 1800°F. One note on the carbon steel pans: they arrive unseasoned with a protective oil coating, so wash that off, dry completely, and season with a thin layer of oil before first use. The patina builds with each use and improves the release.
