Forged from a single sheet of carbon steel, this 11-inch pan reaches searing heat fast, holds it under a full load of steak or potatoes, and shrugs off temperatures up to 1800°F. That range covers the stovetop, the oven, a grill grate, and a campfire, which is more than most skillets in your cabinet can claim. At 3 pounds, it's noticeably lighter to swing than comparable cast iron. The crosshatch texture across the cooking surface is the unusual part. Oils and rendered juices settle into the grooves and redistribute as you cook, which helps browning and gives food something less than a flat surface to stick to. As the patina darkens through use, release keeps improving and the finish becomes its own protective layer. It arrives coated in protective oil and unseasoned, so wash it, dry it thoroughly, and season it as you would cast iron. Three rounds is usually enough to get eggs sliding.
